Mì tàu dai giòn

– 180 gram bread flour

– 60 gram semolina

– 10 gram vital wheat gluten

– 10 gram tapioca flour/starch

– 100ml – 110ml egg + water

– 3 gram salt

– turmeric powder

  • Mix all dry ingredients together and put them into the machine

  • Start the machine and pour liquid into the flour

  • After 3 minutes, stop the machine then re-start for the second and the third mixing

  • Let the dough rest for 5-10 minutes

  • Re-start the machine for mixing and the extruding
