for rather thick and hard shells

  • 200g semolina

  • 50g all – purpose flour

  • 110g egg + water

  • salt

  • turmeric powder

thinner and softer

  • 100g semolina

  • 20g tapioca starch

  • 70g all – purpose flour

  • 90g egg + water

  • salt

  • turmeric powder

If without egg, the water is 85ml

  • Put all flour into the machine, start it and pour liquid into it. Mix 3 minutes

  • Stop it.

  • Restart the machine and repeat the mixing of 3 minutes for 3 times

  • Let the dough rest for 5 minutes

  • Restart it to mix and extrude the dough

  • Boil in 15 minutes

For nice shells, you’s better not to boil them right after extruding but wait for sometime for them to dry
