Bánh canh xắt khuôn 4x5mm

  • 450g bột gạo/rice flour

  • 1 muỗng canh dầu ăn/tbsp cooking oil

  • 1/2 muỗng cà phê muối/tsp salt

  • 245-250g nước thật sôi/BOILING water

  • 50g bột năng/tapioca flour

rice flour + salt + cooking oil mix well in a bow. Then pour BOILING water into it and mix.
Then put tapioca into the dough and mix
Put the dough into machine and operate it: mixing and extruding
cut the noodles out short, put all on a plate and steam it 2 or 3 minutes
Then put it into the machine again and extrude. This time the noodles out are very smooth
The noodles after the second time of extruding will be coated with a little tapioca flour. Noodles will not be boiled but put directly into the broth and cook. Then they will make viscous liquid as in photo below.
