Egg noodles

  • All purposed flour: 450g

  • Tapioca flour: 50g

  • Big egg: 3

  • Water: 50-70ml

  • Salt

  • Turmeric powder

Mix egg + water

Mix all flour together and put into the machine.

Start the machine and pour the liquid into it.

Mix the dough 2 times

Rest 30 minutes

Mix and extrude with the big-holes discs

Cut short and mix again with the noodles disc (1.1mm)

Roll it, microwave 1 minutes. Best taste after rest it 5 hours

Boil fast, drain with tape water, then soak in boiling water.

Finally coat with onion oil

If you want more elastic, replace tapioca flour by gluten
