VIETNAMESE TAPIOCA DUMPLINGS

200g tapioca flour

30g kudzu flour/potato starch/tapioca flour

110ml BOILING water

1 a pinch of salt

2gr xanthan gum

– Put all flour into machine and start

– Pour boiling water into machine

– Mix the dough 3 time

– Let the dough rest 10 mins. Then mix and extrude

Put prawn in and steam 10-12min

Use non-stick paper to cover the bottom of steamer

– Spray water onto the dumpling while steaming

– Serve with chives in hot cooking oil
