Tapioca balls

100g tapioca (or 90g tapioca + 10g rice flour if you want them a little hard

50g ground Korean black sugar + 1 tbsp cacao flour (if needed)
Mix the above ingredients well, directly pour 50g BOLING water into the mixture and mix well. After that knead it for 1 minute
Put another 50g tapioca and mix it well
Put the dough into the machine, start it for mixing and extruding

Cut it into pieces, coat them with a little tapioca and roll them by hand to make them round

Boil them for 15 minutes, turn off the stove, lid the pot for 10 minutes then soak the balls in iced-water for some minutes and drain them

3. put tapioca into the dough
4. smoth string coming out. If the beginning is not smooth, cut and put it into the machine for re-extruding
5. cut them into small pieces
This is without cacao flour therefore it is not as black as it should be
MAKING BLACK SUGAR SYRUP
Boil 100g black sugar with 150g water. Put tapioca balls into it and cook for 5-7 minutes more
Or you can boil the liquid longer to make syrup and soak tapioca balls in the syrup for 1 or 2 hours before serving
