Vietnamese steamed thin rice pancake

200gr rice flour/rice starch

50gr tapioca flour

250gr potato starch

290ml boiling water

5gr xanthan gum

2 tbsp cooking oil

5gr salt

– Put all dry ingredients into machine and start it

– Pour BOILING water into flour

– Mix the dough 3 times

– Let the dough rest 10min, then mix and extrude

boil in boiling water with some cooking oil and salt

boil a few sheets at a time for some seconds, take them out and soak them in cold water then clean them gently

let them dry and coat them with chives oil for favor and prevent sticking
