CHINESE NOODLES with baking soda

All-purposed flour
8gr baking soda
3 egg + water=170gr

Method:
Mix all ingredients in a mixer for 20 minutes at level 2-4. Wrap it and rest in 2-4 hours.
Mix the dough again in the machine. Spray water on it if it looks too dry. The dough must be sticked togethe when pressing by 2 fingers.
Extrude 1-2 times by the big-holes disc. Finally extrude by the desired disc. Rest the noodles 6 hours befor boiling.
Boil it for 30-45 second, take out and soak in cold water.
It is recomended to mix the dough in the evening, extrude the next morning and serve it in the evening.
